Guest guest Posted February 28, 2002 Report Share Posted February 28, 2002 Creamy Mushroom Soup Deluxe Serves: 10 cups, 2 cups per serving Measures Translation Table Ingredients: 4 cups chopped potatoes 4 cups water 2 Tbsp. chopped garlic 1 cup chopped green onions 1 1/2 cups chopped celery 8 ounces fresh mushrooms, chopped 1 tsp. olive oil 2 cups soymilk 2 scoops GeniSoy® Ultra-XT Protein Powder (1/2 cup) 1/2 tsp. salt 1/8 to 1/4 tsp. black pepper Instructions: 1. Bring the potatoes and water to a boil 2. Simmer for 10 minutes until soft 3. Blend them until smooth in several batches in a blender, and set aside to add to the soup later 4. In a soup pot, sauté the garlic, green onions, celery, and mushrooms in the oil 5. Cook until the onions begin to brown and the mushrooms are soft. 6. Stir to prevent sticking 7. Add the soymilk, protein powder, salt, and black pepper to the sautéd vegetables 8. Stir vigorously to dissolve the protein powder into the milk 9. Add the blended potatoes and bring to a simmer 10. Cook for 2 minutes just below boiling so the milk will not separate 11. Turn off the heat, cover, and let sit for several minutes before serving Language is an expression of thought.
