Guest guest Posted February 28, 2002 Report Share Posted February 28, 2002 Easy Cream of Broccoli Soup Serves: 8-10 cups, 2 cups per serving Measures Translation Table Ingredients: 4 cups chopped broccoli (flowers, stalk, and upper stems) 3 cups cubed potatoes 3 cups water 1 cup chopped parsley 1/2 cup chopped fresh dill 2 scoops GeniSoy® Ultra-XT Protein Powder (1/2 cup) 1/2 cup nutritional yeast 2 tablespoons soy sauce 1 tsp. salt 1 cup chopped onion Instructions: 1. In a soup pot, boil the broccoli, potatoes, and onion in the water for 10 minutes 2. Add the parsley and dill to the boiling vegetables, and simmer for 5 more minutes 3. In a blender or food processor, blend the contents of the soup pot along with the dissolved protein powder and soymilk in small batches 4. Do not overfill the blender or food processor 5. Put the blended soup back on the stove, and heat slowly but do not boil 6. Add the salt and serve hot Language is an expression of thought.
