Green Goddess Dip

Serves: 1 cup, 1 Tbsp. per serving

 

Measures Translation Table

 

Ingredients:

1 cup packed sprigs of fresh flat-leaf (Italian) parsley

1/2 cup chopped scallions (both green & white parts)

1/2 cup water

1 cup mashed Mori-Nu® Silken Tofu - Firm

2 Tbsp. freshly squeezed lemon juice

1 Tbsp. extra-virgin olive oil

1 tsp. minced garlic

1/2 tsp. sugar

1/2 tsp. freshly ground black pepper

Dash of salt, or to taste.

 

 

 

Instructions:

1. Put the cup of parsley sprigs, the scallions, and water into a small

saucepan.

2. Cover and bring to boil over medium heat; simmer until scallions are

tender and the parsley is wilted, about 2 minutes. Drain well.

3. Transfer the cooked scallions and parsley to a food processor. Add

remaining ingredients and process until smooth. Adjust seasonings to taste.

4. Refrigerate in covered container for at least 30 minutes before

serving.
