Guest guest Posted February 28, 2002 Report Share Posted February 28, 2002 Green Goddess Dip Serves: 1 cup, 1 Tbsp. per serving Measures Translation Table Ingredients: 1 cup packed sprigs of fresh flat-leaf (Italian) parsley 1/2 cup chopped scallions (both green & white parts) 1/2 cup water 1 cup mashed Mori-Nu® Silken Tofu - Firm 2 Tbsp. freshly squeezed lemon juice 1 Tbsp. extra-virgin olive oil 1 tsp. minced garlic 1/2 tsp. sugar 1/2 tsp. freshly ground black pepper Dash of salt, or to taste. Instructions: 1. Put the cup of parsley sprigs, the scallions, and water into a small saucepan. 2. Cover and bring to boil over medium heat; simmer until scallions are tender and the parsley is wilted, about 2 minutes. Drain well. 3. Transfer the cooked scallions and parsley to a food processor. Add remaining ingredients and process until smooth. Adjust seasonings to taste. 4. Refrigerate in covered container for at least 30 minutes before serving. Language is an expression of thought.
