It is fabulous to look at, and is a major source of soy protein. This goes well with any salad dressing you have on hand. Serves: 6 Measures Translation Table Ingredients: 1 lb. mixed green leafs 1 bunch broccoli, cut into florets 3 carrots, peeled and cubed 3 oz. soy mozzarella cheese, cubed 3 oz. soy cheddar cheese, cubed 3 oz. Lightlife Smart Deli® Slices, Turkey 3 oz. Lightlife Smart Deli® Slices, Ham 1 medium cucumber, sliced thinly 3 Roma tomatoes, cut into 4 wedges each 1/2 cup pitted black olives Dressing of choice Instructions: 1. Line a large bowl or six individual salad bowls with the mixed greens. 2. Top with the broccoli and carrots. 3. Arrange the soy cheeses and soy meats alternatively in the center of the bowls, and garnish with cucumbers, tomato wedges, and olives. 4. Drizzle about 2 tablespoons of dressing over each salad.
