Mini Breakfast Pie

Serve these sausage-filled mini pies with your favorite fruit for a

nourishing breakfast. To beat the morning rush, prepare this the night

before and cover and refrigerate. Just heat in the microwave for a quick

savory breakfast.

 

 

 

Serves: 6 (2 mini pies each)

 

 

 

Measures Translation Table

 

Ingredients:

1/4 cup dry bread crumbs

2 tsp. vegetable oil

1-14oz. package Lightlife Gimme Lean!TMSausage Style

1 egg

2 egg whites

1/2 cup fat-free evaporated milk

1 tsp. dried basil

1/2 cup shredded light cheddar cheese

 

 

 

Instructions:

1. Preheat the oven to 400°F. Lightly coat the insides of a 12-cup cupcake

pan with nonstick spray. Sprinkle 1 teaspoon of the bread crumbs evenly into

each cupcake cup.

2. In a large skillet add the oil. Over medium high heat cook and stir the

Gimme Lean!TMuntil crumbly. Remove skillet from heat. Divide the Gimme

Lean!TM evenly among the cupcake cups.

3. In a large bowl whisk together the egg, egg whites, evaporated milk and

basil. Spoon egg mixture over the Gimme Lean!TM, dividing evenly. Scatter 2

teaspoons of cheese over each.

4. Bake for 20 minutes or golden and eggs are set.
