Morning Glory Snack Cake

Looking for a delicious breakfast fix to complement your fast lane

lifestyle? Try a slice of my nutrient-rich Morning Glory Snack Cake for an

eat-and-run breakfast that can't be beat. The first bite of this moist snack

cake delight will open your eyes with energizing fiber-rich dried fruit and

oatmeal. Crunchy toasted walnuts provide heart-healthy Omega-3 fats. But...

I hid the real nutritional secret in the batter. For a scrumptious daily

dose of soy protein, vitamins and minerals, I substituted Naturade Total

SoyTM Calcium 1000 for some of the flour. To keep the fat low and to give

this cake its moist crumb, I used a combination of yogurt and applesauce. To

create a fluffy rise and prevent the rubbery texture found in many low-fat

cakes, I used cake flour instead of higher gluten all-purpose flour.

Ingredients:

Wet Ingredients

3/4 cup unsweetened applesauce

1 cup nonfat plain yogurt

4 T. melted butter or margarine

3/4 cup egg substitute

3/4 cup packed brown sugar

1 tsp. vanilla

1 1/4 tsp. salt

1 1/2 tsp. cinnamon

1 tsp. nutmeg

Dry Ingredients

1 1/4 tsp. baking soda

1/2 tsp. baking powder

1 1/2 cup cake flour

1 1/4 cup Naturade Total SoyTMCalcium 1000Vanilla ***

2 cups quick oats

3/4 cup chopped toasted walnuts

1 1/4 cup dried mixed fruit (7 oz. bag)

 

 

 

Instructions:

1. Preheat oven to 375°F.

2. In a large mixing bowl, mix all of the wet ingredients with a wire

whisk. Set aside.

3. In a second large mixing bowl, mix all of the dry ingredients with a

rubber spatula until well blended.

4. Using the rubber spatula, fold the dry mixture into the wet mixture a

little at a time until all dry ingredients are moistened. The batter will be

thick.

5. Spray a 9 " x13 " glass baking pan with cooking spray. Scrape batter into

the center of prepared baking pan. With wet hands, pat the batter to spread

evenly.

6. Bake in a preheated oven for 28 minutes, or until lightly browned. Bars

are done when the center springs back when touched lightly with a fingertip.

Place pan on a cooling rack and allow to reach room temperature before

cutting into 16 equal pieces. Bars can be made ahead and frozen up to 2

months. Defrost in microwave or toaster oven.
