Guest guest Posted February 28, 2002 Report Share Posted February 28, 2002 RITZ BITS SNACK 2 10-oz boxes plain Ritz Bits (mini crackers - original) 1 12-oz can cocktail peanuts - salted ½ cup butter or margarine ½ cup light Karo syrup 1 cup sugar 1 tsp. vanilla 1 tsp. baking soda Preheat oven to 250°; put Ritz Bits and peanuts in shallow baking pan. Combine butter, sugar, and syrup in a saucepan. Bring to a boil. Boil for 5 minutes. Remove from heat. Add vanilla and baking soda. Pour mixture over Ritz Bits; stir. Bake 45 minutes, stirring every 15 minutes. Remove from oven and spread mixture on wax paper. Break apart when cool. Note: I've had this recipe since the early 1990s when Ritz Bits came in 10-oz packages. Now they're called Mini Crackers and come in 13-1/2 oz packages. For this recipe, I use a box and a half.
