Guest guest Posted March 4, 2002 Report Share Posted March 4, 2002 Carribean Red Beans and Rice 1 diced onion, chopped 3 cloves garlic, chopped 1/4 - 1/2 tsp nutmeg 1/4 - 1/2 tsp cinnamon 1/2 - 1 tsp cloves salt black or cayenne pepper to taste 1 can kidney beans, drained 1 can (14 oz) tomatoes, chopped 1 cup rice Saute onions and garlic in a little olive oil until onions are translucent. Add nutmeg, cinnamon, cloves, salt and pepper. Put beans in pan, saute around a little bit. Put tomatoes in and saute around a little bit too. Add rice and the appropriate amount of liquid, using the reseved kidney bean and tomato juice for some of it, and topping up with water.
