Guest guest Posted March 5, 2002 Report Share Posted March 5, 2002 Grape Cobbler 10 cups grapes,stemmed and washed 2 1/2 cups sugar 2 1/2 tbs.tapioca 1/8 tsp.salt 1/8 tsp.ground cinnamon 2 tbs.lemon juice 1 tbs.butter or margarine Slip skins from grapes, set aside. Heat pulp to boiling, then put through a food mill to remove seeds. Combine sugar, tapioca, salt and cinnamon. Add lemon juice and grape pulp, cook until thickened, stirring constantly. Remove from heat. Add grape skins and mix. Pour into a 8 inch square baking tin or two 9 inch pie plates. Batter Topping 1/2 cup flour, 1/2 cup sugar, 3/4 tsp.baking powder, 1/8 tsp. salt, 2 tbs.soft margarine or butter and 1 egg slightly beaten Combine and beat until smooth. Drop by spoonfuls over hot grape mixture, spread evenly. It spreads over grapes during baking.
