Guest guest Posted March 5, 2002 Report Share Posted March 5, 2002 Gluten-Free Scalloped Potatoes4 medium russet potatoes (peeled, sliced)3/4 teaspoon onion salt1/4 teaspoon white pepper1-tablespoon onion flakes1/8 teaspoon ground nutmeg1/2 teaspoon dry mustard (Grind your own mustard seeds with small coffee grinder)1 tablespoon cooking oil2 tablespoons potato starch or sweet rice flour*2 cups milk 1 tablespoon Parmesan cheese1 tablespoon butter or margarine (small cubes)Paprika for garnish*Available at natural food stores or on-line at www.bobsredmill.com, www.glutensolutions.com, or www.missroben.com Method:1. Preheat oven to 350º. Toss potatoes with salt, pepper, and onion flakes in 1 1/2-quart casserole or baking dish. Combine remaining ingredients (except butter) in jar with screw top lid. Shake thoroughly until ingredients are blended. Or, blend in blender until smooth.2. Pour milk mixture over potatoes. Dot with butter cubes. Lightly sprinkle with paprika.
