Guest guest Posted March 4, 2002 Report Share Posted March 4, 2002 < DIV> Lemon Mousse Pie1 pie crust (9 inch) -- baked and cooledFilling:1 envelope unflavored gelatin1/2 cup lemon juice1/4 cup water1 teaspoon lemon peel -- grated8 drops yellow food coloring (optional)8 ounces cream cheese1 cup powdered sugar2 cups whipped cream -- whippedCombine gelatin, lemon juice and water, Stir over medium heat untildissolved. Stir in peel and food coloring. Set aside. Combine creamcheese and sugar until smooth, add to gelatin mixture. Refrigerate 15minutes until thick.
