This one uses soup instead of butter and milk which can cut down on the fat and calories if you use the reduced fat version. Enjoy!Ingredients:2 Tbsp. olive oil 3 cloves garlic, peeled and finely chopped 1 tsp. Italian seasoning or dressing4 cups water 2 medium potatoes, cubed (peeled or unpeeled) 1 can (10 oz) condensed potato soup salt and white pepper Preparation:Sauté garlic and Italian seasoning in olive oil for 3 minutes. Add water and potatoes and bring to a boil. Reduce heat and simmer about 20 minutes until potatoes are mushy. Drain and return to pot. Add soup and mash potatoes to desired consistency.
