Guest guest Posted March 8, 2002 Report Share Posted March 8, 2002 Cuban Black Beans Servings: 8Ingredients:1 pound black beans, washed1/4 cup olive oil1 large onion, chopped1 medium green bell pepper, chopped6 cloves garlic, peeled and minced5 cups water1 (6 ounce) can tomato paste1 (4 ounce) jar diced pimentos, drained1 tablespoon vinegar2 teaspoons salt1 teaspoon white sugar1 teaspoon black pepperDirections:1. Place beans in a large saucepan with enough water to cover, and soak 8 hours, or overnight; drain.2. Heat oil in a medium saucepan over medium heat, and saute onion, green bell pepper, and garlic until tender.3. Into the onion mixture, stir the drained beans, water, tomato paste, pimentos, and vinegar. Season with salt, sugar, and pepper. Bring to a boil.
