Dip the cookies quickly so they don't disintegrate before they reach the pan! The Vin Santo wine is a sweet Tuscan dessert wine.24 medium-size gluten-free cookies (coconut, macaroons, Pamela's Butter Short-bread or Carob Hazelnut*)5 large egg yolks1/3 cup sugar1/4 cup sweet Marsala or Vin Santo wine1 tablespoon brewed coffee1/2 cup heavy cream2 teaspoons vanilla1 pound mascarpone cheese, softened1/2 cup cooled espresso or strong coffee2 tablespoons brandy2 tablespoons sugar6 ounces grated bittersweet chocolate1 tablespoon unsweetened cocoa*Available in grocery stores, natural food stores, and on-line at www.pamelasproducts.com1. In medium-size pan or double boiler, beat eggs and sugar together for 2 minutes. Set bowl over simmering water, add Marsala and coffee and beat on low until mixture reaches 160º. Remove from heat and cool.2. In another bowl, beat cream and vanilla until soft peaks form.3. In yet another bowl, whip mascarpone cheese until soft and fold in whipped cream.4. Combine coffee, brandy, and sugar in shallow dish. Quickly dip 12 cookies into mixture, then place on bottom of 11 x 7-inch serving dish. Layer with half of mascarpone filling. Sprinkle with half of grated chocolate. Dip 12 remaining cookies into coffee mixture and arrange on top. Top with remaining chocolate. Dust with unsweetened cocoa.Chill 24 hours before serving.
