Your kitchen will smell wonderful when you pull these outof the oven. Enjoy!Ingredients:MUFFINS:1-1/2 cups uncooked Oatmeal1-1/4 cups all-purpose flour3/4 tsp. cinnamon1 tsp. baking powder3/4 tsp. baking soda1 cup unsweetened applesauce1/2 cup skim milk1/2 cup firmly packed brown sugar3 Tbsp. vegetable oil1 egg white (or egg beaters)TOPPING:1/4 cup uncooked oatmeal1 Tbsp. firmly packed brown sugar1/8 tsp. cinnamon1 Tbsp. melted margarinePreparation:Heat oven to 400 degrees. Spray muffin tin with non-stick spray. Combine oats, flour, cinnamon, baking powder and baking soda. Add applesauce, milk, brown sugar, oil and egg white. Mix just until moistened.
