Veggie Loaf

 

I made this loaf last Friday. It's quick and easy to

make, and good.

 

1 12oz. Nasoya 5 spice tofu

1 can Progresso 19oz. chick peas (drain most of water)

3 cups oats

2 carrots finely cut or shredded

2 stalks celery finely cut

1 onion-finely cut

1/2 bell pepper-finely cut

1/2 cup finely shredded purple cabbage

1/4-1/3 Braggs Liquid Aminos

salt to taste

 

Start with tofu, drin most of the seasoned water off, then put in large

mixing bowl with oats, carrots, celery, onion, bell pepper, cabbage and

salt. Next add Braggs Liquid Aminos, amount varying upon moistness that you

desire of loaf. Mix together well, spray loaf

pan with olive oil spray or equivalent, put mixture into pan, top with

parsley and bake at 375 degrees for 35-45 min. or until slightly crusty and

firm.
