Strawberry Cheesecake Pie

 

1 graham cracker crumb crust (keebler fat free kind is vegan)

2/3 C coconut milk mixed with 2 Tbspns sweetener

Ener-G egg replacer to equal 1 egg

8 ounces tofutti better than cream cheese, plain

1/2 cup dry sweetener

2 Tbspns flour

1 Tbspn lemon juice

1 tspn grated lemon peel

2 to 3 cups halved fresh strawberries

1/4 cup strawberry jelly (i omitted this you can make your own I suppose)

 

Preheat oven to 325°. Place coconut milk mixture, egg replacer, cream

cheese, sweetener, flour, lemon juice and lemon peel in blender. Blend til

smooth. Pour into crust. Bake for 30 to 40 minutes or til edge is set but

center stillmoves slightly. Cool in pan on wire rack. Arrange strawberries

on top of pie, then drizzle with jelly. Refrigerate well before serving.
