Guest guest Posted March 13, 2002 Report Share Posted March 13, 2002 < DIV> Macaroons 3 large egg whites1 1/4 cups granulated sugar4 cups sweetened, flaked coconut1 teaspoon lemon zest1-teaspoon lime zest1 teaspoon orange zestLine 2 baking sheets with parchment paper or silicone baking mats.In heatproof bowl over simmering water, combine egg whites, sugar and coconut. Stir constantly until mixture reaches 160 F when measured with instant-read thermometer. Remove from heat. Stir in zest. Drop by level tablespoons onto prepared baking sheets. Shaped into rough mounds with fork dipped in water. Allow to sit, uncovered, at room temperature for 1 hour. Meanwhile, position rack in upper half of ovenand preheat to 350 F.
