< DIV> Tomato Florentine:

 

1 med. onion, diced2 cloves garlic, minced1 tbsp. olive oil2 (1 lb.) cans tomatoes2 (1 lb.) cans tomato sauce2 tsp. oregano2 tsp. basil2 tsp. thyme1 bay leaf1 bunch fresh spinach, washed & choppedSalt & pepper to tasteSauté onion and garlic in large kettle in olive oil.

 

Add tomatoes, tomato sauce and spices.

 

Simmer about 30 minutes.

 

Remove bay leaf.

 

Add spinach. Makes about 6 (2 cup) servings.
