Guest guest Posted March 21, 2002 Report Share Posted March 21, 2002 Lemon Pie Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups pineapple juice 1/3 cup light corn syrup 1/3 cup cornstarch 1/4 cup lemon juice 1 tablespoon orange juice, frozen concentrate 1 teaspoon vanilla 1 teaspoon grated lemon peel 1/4 teaspoon salt 1 cup Dreamy Cream Whip [or creamy tofu topping] 1 9-inch pie crust -- baked Cook everything except the Dreamy Cream Whip over medium heat. Stir constantly to prevent scorching. When thick, remove from heat. Let stand at room temperature for 10 minutes. Fold in Dreamy Cream Whip. Pour into pie shell and refrigerate. Before serving, top with more Dreamy Cream Whip.
