Guest guest
Wild Rice and Mushrooms Yield: 1 servings 1/2 cup wild rice 1 onion, large 1 celery stalk, large 1/2 lb. fresh mushrooms 1/2 cup vegan margarine (or olive oil) 1 tsp. each sage and thyme salt to taste Rinse wild rice, put in a pot of boiling water (c. 3-4 C), cover, boil gently until rice grains burst and are quite soft (c. 40 minutes). Drain. Dump in a cup or so of cold water to fluff, drain. This gives you around 3 c of cooked rice. Finely mince onion and celery. Melt about 2/3 of margarine in pan, add onion and celery, and sauté for about 3 minutes, stirring. Add to rice. Slice the mushrooms. Melt remaining margarine in pan, add mushrooms, and sauté gently until mushrooms barely start releasing liquid. Add all to rice. Add flavorings to taste, toss rice.
