Guest guest Posted March 21, 2002 Report Share Posted March 21, 2002 Vegetarian Wild Rice Yield: 2 servings 1/2 cup celery 1/2 cup onion 1/2 cup parsley, chopped 1/2 cup vegan margarine or olive oil 1 10-oz. box tofu 2 cups water 1/2 cup wild rice 1/2 cup short grain brown rice 3 Tbsp. lemon juice 1/2 tsp. rosemary In skillet, stir-fry celery, onion, and parsley in margarine for 10 minutes. Blend tofu and water together; add to skillet; also add wild rice, brown rice, lemon juice and rosemary; bring to a boil. Reduce heat to low and let rice absorb moisture, about 30-40 minutes. Serve.
