Guest guest Posted March 25, 2002 Report Share Posted March 25, 2002 Nature WILD RICE POTATO SOUP 1 small onion, finely chopped 1 - 2 cloves garlic, finely chopped 1 cup water or McKay's chicken stock 2 - 4 slices of Morningstar Farms™ Breakfast Strips, cut into small pieces ½ cup fresh mushrooms, sliced 1 (10 3/4-oz.) can cream of potato soup 1 cup half and half 1 cup cooked Indian Harvest Wild Rice ½ - 1 cup Swiss cheese, depending on taste To taste, pepper or Tabasco Fresh parsley, finely chopped 1) Cook, in covered pan, the onion and the garlic in the water or stock until tender. 2) Cook the breakfast strip pieces until crisp. Drain well. Set aside. 3) Sauté the mushrooms in a little water until cooked. Set aside. 4) Add the can of potato soup to the onion/garlic/water or stock mixture. 5) Stir in the half and half. 6) Add the bacon, mushrooms and wild rice. 7) Stir in the cheese. 8) Stir in the pepper or Tabasco. 9) Garnish with parsley.
