Guest guest Posted March 25, 2002 Report Share Posted March 25, 2002 Nature BASMATI BLEND PILAF WITH PINE NUTS, CHIKEN & BROCCOLI 2 Tbsp soy butter or olive oil ¼ cup onion, chopped 1 - 2 cloves garlic, chopped 1 cup uncooked Indian Harvest Basmati Blend 2 cups water 2 tsps of McKays chicken seasoning ½ tsp salt To taste, pepper 2 cans of Worthington® Diced Chik cubed 1 cup broccoli, cut into small pieces and cooked 2 Tbsp pine nuts Chopped fresh parsley 1. Melt the butter in saucepan over medium heat. Add the onion and sauté over low heat, stirring, until golden, about 5 minutes. Stir in the garlic and sauté 1 minute more. 2. Add the Basmati Blend and stir constantly for 3 minutes. Then add the water, tsps of chicken seasoning, salt and pepper. Bring to a boil, stirring. Cook, covered, over medium low heat for 15 minutes or until the liquid is absorbed. Let stand, uncovered, off the heat for 5 minutes before serving. 3. Meanwhile, toast the pine nuts in a small skillet over low heat, stirring constantly, until golden, about 2 minutes. 4. Warm the cooked chicken and broccoli in a microwave. 5. Toss the Basmati Blend with the pine nuts, chiken, broccoli and parsley. Language is an expression of thought.
