BASMATI BLEND FRITTATA WITH MOCK SAUSAGE & CHEESE

Morningstar Farms™ Sausage Style Recipe Crumbles

A little oil

½ large sweet yellow onion, cut vertically into ¼ inch slices

1 - 2 cloves garlic, finely chopped

½ cup slivered (1 x 1/8 inch) red bell pepper

2 cups cooked Indian Harvest Basmati Blend Rice

1 tsp. basil

2 - 3 Tbsp. fresh parsley, chopped and divided

Pinch, of salt

To taste, fresh ground pepper

10 large eggs, beaten or 2 1/2 cups of Egg substitute like Morning Star

Scramblers

2 Tbsp. veggie parmesan cheese

1 ½ cups (in total) veggie mozzarella and cheddar cheeses, shredded

 

1. Brown the sausage in a skillet. Transfer to a sieve to drain off the fat.

Wipe out the skillet.

 

2. Heat the oil in the skillet. Add the onions and sauté over low heat,

stirring occasionally, until golden brown. Add the garlic and red pepper and

sauté for a further few minutes.

 

3. In bowl, stir together the sausage, onion, garlic, red pepper, cooked

Basmati Blend Rice, basil, half of the parsley, salt and pepper. Spread in a

lightly buttered or oiled 9 x 13 pan.

 

4. Whisk the eggs with the parmesan cheese and pour over sausage mixture.

 

5. Bake in a preheated 325 degree oven for about 30 minutes or until

frittata is set.

 

6. Sprinkle cheeses and reserved parsley on top and bake until cheese has

melted. Cut into squares and serve.
