Guest guest Posted March 25, 2002 Report Share Posted March 25, 2002 Nature BLACK PEARL MEDLEY VEGETABLE SALAD WITH ORANGE BUTTERMILK DRESSING 8 oz pkg Indian Harvest Black Pearl Medley, cooked using package directions (about 3 cups cooked), more can be used if desired 1 red bell pepper, diced 6 spring onions, sliced 1 - 2 cloves garlic, finely chopped 1 carrot, diced 1 celery stalk, diced 1 cup fresh or frozen peas ½ cup shopped fresh parsley 2 Tbsp chopped fresh basil 1 Tbsp chopped fresh mint ½ cup nonfat buttermilk 2 Tbsp extra-virgin olive oil 2 Tbsp fresh lemon juice 2 Tbsp fresh orange juice To taste, salt and pepper To taste, sugar 1. Combine the cooked Black Pearl Medley with the bell pepper, spring onions, garlic, carrot, celery, peas, parsley, basil and mint. Toss well. 2. In a separate bowl, combine the buttermilk, olive oil, lemon juice, orange juice, salt and pepper, and sugar. Blend well. 3. Pour dressing over salad just before serving. Taste and adjust seasonings if necessary. Servings: 6-8 Language is an expression of thought.
