Indian Harvest Golden Jewel Blend or Israeli Couscous b.. 1/2 c. Sun-dried Tomatoes (diced) c.. 1/2 c. Black Olives (diced) - Calamata Olives Preferred d.. 1/4 c. Red Onion (diced) e.. 1 Tbsp. Oregano (fresh, chopped) f.. 2 Tbsp. Mint (fresh, chopped) g.. 1/2 c. Lemon Vinaigrette: 1/4 cup each Lemon Juice and Extra Virgin Olive Oil with Salt (Kosher preferred) & Sugar to taste h.. 1/4 c. Olive Oil i.. 4 oz. Fresh Spinach, julienne cut (cut in matchstick size strips) j.. 4 oz. Feta Cheese k.. 2 tsp. Garlic (fresh, minced) l.. to taste Salt (Kosher preferred) & Pepper 1.. Cook Golden Jewel Blend or Israeli Couscous according to package directions, set aside and cool.. 2.. To make vinaigrette, mix olive oil and lemon juice with whip. Add sugar and Kosher salt to taste. 3.. Add all remaining ingredients (except feta cheese) and mix well. Chill salad and garnish with feta cheese before serving. Language is an expression of thought.
