Tamale Pie

Source: Recipes of Friendship Cookbook

 

2 cup kernel corn

3 cups chopped, canned tomatoes

1 large onion, chopped

1 - 6 oz. can pitted black olives, sliced

1 tsp. salt

1/4 tsp. garlic powder

1 cup soy or nut milk

1 cup cornmeal

 

Boil first 6 ingredients together for 20 minutes. Mix the remaining

ingredients together and add to the tomato mixture after it is done cooking.

Bake in a 7 - 11 inch prepared baking pan at 325° for 1 hour.

 

Excellent served with corn chips.
