Guest guest Posted March 25, 2002 Report Share Posted March 25, 2002 Nature Butternut Squash and Apple Soup Makes 6 servings 1 medium butternut squash, pared, seeded and cut into 1-inch cubes 2 medium Granny Smith apples, pared, cored and cut into l-inch cubes 4 scallions, white part only, cut into l-inch pieces (reserve green for garnish, if desired) 3/4 cup unsweetened apple juice l Tbs. honey l Tbs. lemon juice 1 tsp. salt or to taste l tsp. ground cinnamon Sour cream for garnish, optional Chopped pecans for garnish, optional 1. In 3-quart Casserole, place squash, apples, scallions, apple juice, honey, salt, lemon juice and cinnamon. Microwave on High 6-10 minutes until squash, apples and onion are very soft. 2. Carefully transfer hot mixture to blender container, or food processor. Process in batches, if necessary, until smooth. 3. To serve, ladle soup into bowls and garnish, if desired, with sour cream, pecans and scallions strips. Language is an expression of thought.
