Guest guest Posted March 25, 2002 Report Share Posted March 25, 2002 Nature Creamy Garlic Mashed Potatoes Makes 6 servings 2 lbs. potatoes, pared and cut into cubes 3 garlic cloves 1 1/2 tsp. salt, divided l/3 cup dairy vegan sour cream 1/3 cup Soy milk 1 tsp. coarse-ground black pepper l Tbs. minced fresh parsley 1. In large saucepot, place potatoes, garlic and l tsp. salt and enough water to cover potatoes. Bring to a boil; reduce heat and simmer until potatoes and garlic are fork tender; drain and place potatoes and garlic in a bowl. 2. With electric mixer at medium speed, blend potatoes and garlic until just mashed. Add sour cream, milk, remaining 1/2 tsp. salt and the pepper. With Mixer at high speed, blend until smooth.
