Guest guest Posted March 25, 2002 Report Share Posted March 25, 2002 Nature Meatless Tacos Makes 4 servings 1 cup water 1/3 cup couscous 1/4 cup quick-cooking barley 1 Tbs. taco seasoning 8 oz. drained tofu (fresh bean curd), chopped 1/2 cup chopped onion 1 can (8 oz.) tomato sauce 8 taco shells 1 1/2 cups shredded lettuce 1 medium tomato, chopped 1/2 cup veggie shredded cheddar cheese 1. In the bottom dish of a steamer, combine water, couscous, barley, and taco seasoning. Place tofu and onion in a single layer in the top of steamer. Pour tomato sauce over tofu and onion. Cover and cook on Med for 8-11 minutes, until barley is tender. 2. Stir tofu mixture into couscous mixture. 3. To serve, spoon mixture into taco shells. Top with lettuce, chopped tomato and cheese.
