Guest guest Posted March 26, 2002 Report Share Posted March 26, 2002 Peanut Butter Loaf Source: Recipes of Friendship Cookbook 1 cup peanut butter 3 cups tomato juice or blended canned tomatoes 1/4 cup flour 1/2 cup cornstarch 1 tsp. salt 1 large onion 3 Tbsp. yeast flakes Combine all ingredients in blender. Blend until smooth. Pour into a well prepared loaf pan or round can. Cover top tightly with foil. Place ina pan of water 1-inch deep to bake. Bake at 250° for 2 hours. Check occasionally to make sure water does not boil away. This loaf thickens as it gets cold. Cool to room temperature. When cool, remove by sliding a knife around the edges of the pan and invert onto a plate. Wrap in plastic wrap and chill. This makes great sandwiches when accompanied with a sunflower seed dressing! Add tomato, alfalfa sprouts, or lettuce! Language is an expression of thought.
