Guest guest Posted March 26, 2002 Report Share Posted March 26, 2002 Broccoli Cheese Soup Source: Recipes of Friendship Cookbook 1 1/4 cups cooked potatoes 1 1/2 cups cooked carrots 1 medium onion, steamed 1/2 cup sunflower seeds or cashews, washed 3 1/4 cups water 1 tsp. salt 4 cups broccoli, cut in bite-sized pieces Steam broccoli until tender while preparing " cheese " cause. Blend nuts or seeds with just enough water to cover. Blend until very smooth. Add potatoes, carrots, onion, salt and remaining water. Blend until smooth. This may have to be done in two steps as you may not have enough room in your blender. Pour into a saucepan and add cooked broccoli. Heat over medium heat until thick and hot. Serve hot. Variations: Substitute cauliflower for the broccoli. Use a mixture of cauliflower and broccoli. Language is an expression of thought.
