Guest guest Posted April 1, 2002 Report Share Posted April 1, 2002 Vegetable Couscous From Good Housekeeping Ingredients 3 - green onions 2 - medium-size carrots 1 tablespoon olive or salad oil 1/4 teaspoon salt 1/4 teaspoon pepper 1/8 teaspoon ground cinnamon 1 can 13 3/4- to 14 1/2-ounces of Vegetable Broth 1 cup couscous (precooked semolina) 1/2 teaspoon grated orange peel (optional) Preparation - Estimated cooking time: 15 minutes - 1 Finely chop green onions. Dice carrots. In 3-quart saucepan over medium-high heat, in hot olive or salad oil, cook green onions, carrots, salt, and pepper, stirring occasionally, until vegetables are tender-crisp. Stir in ground cinnamon. 2 Add chicken broth to vegetable mixture; over high heat, heat to boiling. Stir in couscous. Cover saucepan; remove from heat and let stand 5 minutes.
