Guest guest Posted April 2, 2002 Report Share Posted April 2, 2002 Bolo di Banana (Plaintain Pudding) serves 12 This is a typical Caribbean complement to any typical dish served at various restaurants across the island. Peal and cut in half lengthwise: 5 very ripe plaintains Melt in a heavy skillet: 1/3 cup of butter Fry the plaintains until golden brown and remove from the skillet. Stir into the drippings until the sugar is dissolved: 2 1/2 cups of brown sugar 2 Tbs. water Remove from the heat. Mash the plaintains well, adding the brown sugar mixture. Grate and add to the plaintains: 1/2 lb. sharp yellow cheese Preheat oven to 350º. Stir in: 1/2 cup cracker crumbs 2 tsp. cinnamon 1 1/2 tsp. all spice 1/2 cup raisins 1/2 cup dry sherry Mix the ingredients well and pour into a well buttered casserole. Bake for about 40 minutes.
