Lemon Cheesecake

1 c. water

1/4 c unbleached white flour

1/4 c honey

1/2 t lemon extract

1/8 t. salt

2 T olive oil

2 T tofu milk powder

1/8 c water

2 t vanilla

1 6 oz. package dessert tofu

1/4 c lemon flavored gelatin powder (vegan)

1 T unflavored gelatin

 

1. Place water, flour, honey, lemon extract, and salt into a blender an

blend until smooth.

2. Pour blended mixture into a small saucepan. Stir constantly over a

medium heat until sauce comes to a slow boil.

3. Return mixture to blender and add all remaining ingredients. Blend

until thick and creamy.

4. Pour sauce into a baked pie crust shell or over your favorite crumb

crust.

5. Chill and serve. Fills one 8 " pie crust shell or covers an 8 " square

cake pan.
