Guest guest Posted April 2, 2002 Report Share Posted April 2, 2002 RICE AND MANGO MERINGUE Ingredients: 2 ozs. rice 1 pt. milk 1 oz. sugar 2 eggs separated 2 ozs. fine sugar pinch of salt stewed mangoes Preparation: Wash rice and put in a saucepan with milk and pinch of salt. Cook slowly until thick. Let cool, then add 1 oz. sugar and yolks of eggs. Mix well and pour into buttered pyrex dish and bake until tender. Arrange mangoes over rice mixture. Beat egg whites stiffly with 2ozs. sugar. Pile on top of mangoes and bake until slightly brown, for 15-20 mintues. Serve hot. Language is an expression of thought.
