Guest guest Posted April 4, 2002 Report Share Posted April 4, 2002 Savory Stuffed Peppers* 8 servings 2 qts. of boiling water 4 bell peppers (2 green & 2 gold, orange or red), halved and seeded 1 1/2 tsp. olive oil 1 medium red onion, chopped 5 cloves garlic, minced 14 oz. pkg. Gimme Lean, sausage flavor or ground beef flavor. 2 cups cooked brown rice 2 tsp. thyme 4 lg., fresh basil leaves, snipped 1/2 cup white wine 14 oz. can stewed tomatoes, Italian spiced 25 oz. can fat-free tomato sauce 1 bay leaf 4 fresh basil leaves, snipped 1 tsp. granulated garlic Preheat oven to 375ƒ and take out a 9 " by 13 " baking pan. Place halved peppers in boiling water and blanch 5 minutes. Plunge into cold water, set aside. In a 10 " frying pan, heat oil over medium high flame, 1 minute. Add onions and garlic, saute 3 minutes. Add Gimme Lean, stir using a large spoon to break apart, cook 5 minutes. Add the next 3 ingredients and cook 3 minutes. Add wine and lower heat, simmer 5 minutes, or until ready to stuff peppers. In a medium saucepan, mix together the tomato sauce with the remaining ingredients and cook over medium low heat, 10 minutes. Cover bottom of pan with half of the sauce. Fill each pepper half with savory filling and place in the pan. Top with remaining sauce and cover casserole with foil. Bake 30 minutes. Remove foil and continue baking for an additional 10 to 15 minutes.
