Guest guest Posted April 8, 2002 Report Share Posted April 8, 2002 Blackberry Cornbread 1 1/4 cups all-purpose flour 3/4 cup cornmeal 1/2 teaspoon salt 2 1/2 teaspoon baking powder 1/2 cup sugar 2 eggs, lightly beaten 3/4 cup milk 1/4 cup butter, melted 2 cups blackberries, fresh or frozen Preheat oven to 400 degrees. Lightly grease an 8 by 8-inch baking pan. Sift dry ingredients together. In a separate bowl, combine eggs, milk and melted butter. Pour liquid ingredients into flour mixture, and stir well. Add berries and mix. Pour batter into baking pan. Bake at 400 degress until top is lightly browned, about 30 minutes. Cut into squares and serve warm.
