Guest guest Posted April 8, 2002 Report Share Posted April 8, 2002 Killer Pecan Pie By Evelyn Raab from The Clueless Baker: Baking from Scratch - Easy as Pie (Key Porter Books Ltd., 2001) 1 cup Corn syrup 250 mL 2/3 cup Granulated sugar 150 mL 3 Eggs 3 1/4 cup Melted butter 50 mL 1 tsp Vanilla 5 mL 1 cup Coarsely chopped pecans 250 mL 1 Unbaked 9-inch (23 cm) pie shell 1 Preheat the oven to 350°F (180°C). In a mixing bowl, beat together the corn syrup, sugar, eggs, melted butter and vanilla with an electric mixer until slightly thickened - about 2 or 3 minutes. Stir in the chopped pecans, and pour the mixture into the prepared pie shell. Bake for 55 to 60 minutes, or until a knife poked into the center of the filling comes out clean. Ridiculously easy for something so good, isn't it? Makes one 9-inch (23 cm) pie.
