Guest guest Posted April 8, 2002 Report Share Posted April 8, 2002 Baked Pizza Soup 1 cup vegetable broth 1 cup tomato juice 1 cup water 1 cup diced peeled tomatoes, undrained 1 small onion, sliced 1 green pepper, seeded, chopped 1 1/2 tsp. pizza herbs, or 3/4 tsp. basil and 3/4 tsp. oregano 4 thin slices round Italian bread, toasted 4 (1 oz.) slices mozzarella cheese Combine first 7 ingredients in saucepan; simmer for 30 min. Pour into individual ovenproof soup bowls. Float 1 slice bread in each bowl of soup; top bread with cheese slice. Place bowls on baking sheet and bake at 400* until cheese is melted or broil until cheese is bubbly.
