Guest guest Posted April 8, 2002 Report Share Posted April 8, 2002 Eggplant Casserole Baking Temperature: 375 degrees Baking Time: 30 Minutes :: Cooking Instructions :: For the eggplant > 1-1/2 lb eggplant peeled and cut into 1/4 inch slices - Place in sauce pan with 1/2 c boiling water; 1/2 tsp salt eggplant slices - Bring to boil and cook 10 min. Drain and mash. Once the cooked eggplant is mashed, add in > 2 tbl butter 2 lg eggs 1/4 tsp pepper 1 tsp finely chopped onion 1 tsp salt 1/4 tsp oregano 3/4 c crushed saltines - Turn into a buttered 1-qt casserole. Cover surface with sliced tomatoes, salt, and pepper - Add 1/2 c grated sharp cheese. - Bake. - To make your dish tastier, add cheese in the casserole as well, not just on top. ===== Language is an expression of thought.
