Guest guest Posted April 8, 2002 Report Share Posted April 8, 2002 Herbed Quinoa 01-APR-98 p. 34 6 Servings—Vegan 2 1/2 cups vegetable stock of broth 1 1/2 cups quinoa ( Salt to taste (optional) 3 Tbs. chopped fresh herbs 2 tsp. butter or soy margarine In medium saucepan, bring stock to a boil. Add quinoa and salt if desired. Reduce heat to low. Cover and cook until quinoa is tender and liquid is absorbed, about 15 minutes. Remove from heat, add chopped herbs and butter or soy margarine.
