Guest guest Posted April 9, 2002 Report Share Posted April 9, 2002 Meatless Kreplach Dumplings Serves: 6 servings Measures Translation Table Ingredients: 2 teaspoons vegetable oil 1 medium carrot, diced 1 small onion, finely chopped 2 medium celery stalks, diced 1 package Gimme Lean!TM Beef or Sausage 2 large egg whites 1/2 cup parsley, chopped 1 cup unbleached white flour 1 large egg, lightly beaten 2-4 tablespoons water ground black pepper and salt 2 quarts vegetable stock Instructions: 1. Heat oil in large skillet. Add onion and carrot. Cook, stirring, until beginning to soften. 2. Add Gimme Lean!TM Beef or Sausage. Break up large pieces and cook, stirring often, for 5 minutes. 3. Transfer mix to large bowl. Add parsley, egg whites, salt and pepper and stir until well-blended. 4. Set aside to cool. In food processor, combine flour with salt and blend. 5. Add lightly beaten egg, and 2 tablespoons water and process until dough becomes a ball, adding more water, a little at a time. 6. Turn dough out onto a lightly floured surface and knead until smooth and elastic. 7. Roll out a third of the dough 1/4 inch thick, (covering remainder with a towel). Cut into 3-inch squares. 8. Place 1 heaping teaspoon of filling in center of each square, moisten edges with a little water, fold over to form a triangle, and seal with fork. Repeat with remaining dough and filling. 9. Bring large pot of water to a boil. 10. Drop in 8-10 kreplach at a time and cook for 15-20 minutes. Remove with slotted spoon, drain and cool. 11. To serve, add kreplach to simmered vegetable stock, and simmer for 20 minutes.
