Pasta Primavera with Mock Sweet Italian Sausage

Serves: 4-6 servings

Ingredients:

1/2 pound of your favorite pasta

1 package Italian Lean LinksTM

1/4 cup olive oil

1 tablespoon garlic, minced

1 medium yellow pepper, sliced into 2 " x1/2 "

matchsticks

1 medium red pepper, sliced into 2 " xl/2 " matchsticks

2 cups broccoli, small florets

12 black olives, halved

1/4 cup white wine

1 tablespoon fresh basil, chopped

1 teaspoon fresh sage, chopped

1 teaspoon dried oregano

1 teaspoon sea salt

 

 

 

Instructions:

1. Cook pasta in boiling water. Drain. Toss in 1

teaspoon olive oil. Set aside.

2. Blanch the peppers and broccoli. Cool and set

aside.

3. In a 10 " skillet, brown whole Italian Lean

LinksTM in the remaining olive oil. Drain. Cut

diagonally into 1/2 " thick slices. Set aside.

4. In the same skillet, briefly sauté the garlic and

peppers with salt. Toss in the herbs, olives,

broccoli. Add wine, simmer for 2 minutes.

5. Serve immediately over pasta. Try a

garlic-parsley spaghetti or tomato-basil linguine for

added color and taste.
