Guest guest Posted April 9, 2002 Report Share Posted April 9, 2002 Candied Yams 5 or 6 sweet potatoes 1 cup granulated sugar 1 Tbs Flour 1 1/2 cup water 2 tsp vanilla 1/2 cup packed brown sugar 1/2 tsp cinnamon Small marshmallows (optional) 1/ cup finely chopped nuts (optional) Scrub the potatoes clean rub with vegetable oil and bake at 350° for 45 minutes or till tender. Cool and peel the potatoes. Cut potatoes in 1 inch chunks and arrange in bottom of greased 13 x 9 " baking dish set aside. In a small sauce pan add the water, sugars, flour, vanilla and cinnamon. Blend well cook on med to low till all sugar are dissolved. Pour over potatoes. Bake at 350° for 30 minutes. Sprinkle with the nuts and marshmallows the last 10 minutes of baking if desired. Most recipes call for the potatoes to be boiled. But I always baked mine. I believe you get more flavor that way. __________ Deviled Eggs For a Dozen deviled eggs. I always boil extras incase come split. 9 Hard boiled eggs 3 table spoons sweet pickle relish about 1/2 cup mayonnaise Paprika salt and pepper to taste Slice eggs in half. Put yolks and split or extra half's in a med bowl. mash up add the pickle relish and the mayonnaise. Blend Salt and pepper to taste. Fill the egg halves and place on egg plate sprinkle with paprika. Keep in refrigerator till ready to serve. This usually leaves just enough for a egg salad sandwich around here ! __________ Green Bean Casserole 2 cans French style green beans 2 cans cream of mushroom soup 1/4 cup seasoned bread crumbs 1 can fried onions Drain the green beans. Pour into a casserole dish cover with the soup , sprinkle the crumbs over top and top with the onions. Cover loosely with foil. Remove the foil for the last 10 minutes. Bake in preheated oven at 350° for about half an hour when nice and bubbly. This is real good ! ___________ Sweet Potato Soufflé 5 or 6 med sweet potatoes cooked till tender and pealed ( I bake mine ) 2 eggs 2 Tbs butter 1 1/2 cup sugar 1/4 cup evaporated milk 2 tsp vanilla Topping 1 cup brown sugar 1/2 stick soft butter1/2 cup pecans In a large mixing bowl beat potatoes till smooth. Add remaining ingredients except the topping. Blend well. Spread evenly in a 13 x 9 " greased baking disk. Mix the topping ingredients together and spread evenly over potatoes and bake in preheated oven at 375° for 20 minutes. ===== Language is an expression of thought.
