Fried yellow squash

 

1 good mess of squash ( I would say 6 or 7 med squash)

1/4 cup oil

1 med yellow onion chopped

salt and pepper

 

Slice squash into small rounds. Heat the oil in a

large frying pan, add the squash and onion.

 

Salt and pepper while cooking. Cover and simmer on

med stirring often and scraping bottom of pan cook

till squash is tender and slightly browning
