Guest guest Posted April 10, 2002 Report Share Posted April 10, 2002 Crockpot Apple Bread Pudding 8 pieces white or egg bread -- (8 to 9) 3 apples -- preferable Golden Delicious 1 tbl Grated lemon rind 1 tsp. cinnamon 1 cup apple juice 1/2 cup toasted walnuts -- optional 4 tbl. butter 2 tbl. lemon juice 1/2 cup brown sugar -- (1/2 to 1) 1/4 tsp. nutmeg 1/2 cup golden raisins Spread bread with butter and toast both sides under a broiler. Cut bread into chunks. Place all ingredients in the slow cooker except walnuts. The amount of sugar should be determined by tartness of apples. Set slow cooker on low and allow to cook for 5 to 6 hours. If possible, gently stir halfway through cooking process.
