Southern Vegie Medley

 

1 lb green beans

1 large onion, chopped

1 red pepper, cut into strips

2 cloves of garlic, chopped

1 tbsp corn oil

1 cup frozen black-eyed peas

1/2 cup vegetable broth

1/2 tsp dried thyme leaves

1/8 tsp EACH ground red and ground black pepper

 

In a large saucepot over high heat, boil green beans

in salted water for 10 minutes - then drain. In a

large skillet over high heat, cook onion, red pepper

and the garlic in hot oil for 5 minutes, stirring

constantly.

 

Add the black-eyed peas and the broth. Bring to a

boil. Reduce heat, cover, and simmer for 15 minutes.

 

Stir in green beans and remaining ingredients. Cook

for 5 minutes, stirring constantly.
