Guest guest Posted April 11, 2002 Report Share Posted April 11, 2002 Tofu Stuffed Manicotti 8 ounces manicotti shells, uncooked 1 pound firm tofu, mashed 1/2 cup onions, chopped 2 garlic cloves, minced 1/4 cup soy parmesan cheese 32 ounce jar spaghetti sauce 1 cup water 1 tablespoon olive or canola oil In a large skillet sauté onions and garlic in canola oil until onions soften. Mix in tofu and parmesan cheese, stir until heated,set aside. Heat spaghetti sauce and water in saucepan to boiling; reduce heat and keep warm. Spoon tofu mixture into uncooked manicotti shells. Pour 1 cup sauce on bottom of 9 X 13 oblong baking dish. Arrange filled manicotti in a single layer over sauce. Pour remaining sauce over manicotti. cove with aluminum foil, bake at 400 degrees for 40 minutes or until hot and bubbly. Remove foil; bake 10 minutes longer.
